What is soft cheese?

Soft cheese is one of the most diverse types of cheese and contains 67 percent water. It is therefore between the semi-hard semi-hard cheese and cream cheese varieties. It can be enjoyed both in the cold kitchen served on bread and in the warm kitchen, for example, processed into sauces or eaten au gratin. Soft cheese can be made from cow's, sheep's or goat's milk. It can also be made from pasteurized and raw milk. Depending on the ripening time, the aroma can be different: young, slightly ripened soft cheese has a mild taste; long-ripened soft cheese has a spicier, stronger flavor. Many types of soft cheese are refined with mold cultures, so there is soft cheese with white mold such as Camembert or Brie, soft cheese with a red culture such as Limburger or Romadur and blue cheese such as Gorgonzola or Roquefort.

Soft cheese is often surrounded by a white or red layer of mold or has blue veins of mold running through it, which is why the consumption of soft cheese during pregnancy is not recommended. Soft cheese is often also made from raw milk, which is why you should generally avoid it. Even if soft cheese is made from pasteurized milk, it is not recommended because soft cheese is wetter and less acidic. Because of this, he is more prone to the growth of listeria. If you contract this infectious disease, it can lead to a miscarriage.
